Olde Saratoga was established in 1997, and is the fourth largest brewery in New York State.  The company is owned by the Mendocino Brewing Company, which is based in California.  The brewmaster is Paul McErlean.  The brewery does a lot of contract brewing and brews beer for local New York breweries Sackets Harbor Brewing Company, Blue Point Brewing, Southampton  Brewery, Harlem Brewing Company, and the Shmaltz Brewing Company.
